The great thing about this snack is, that is is made completely without color additives or preservatives and contains fewer calories than the beloved jellybears.
Even if the name sounds strange at first, it is basically just puffed fruit puree. By baking, the fruit mass it gets a flexible consistency. That is also the reason it is called fruit leather.
What fruits are suitable for fruit leather?
Basically every fruit variety can be transformed into fruit leather. Nevertheless there are some tips that can be helpful.
- The sweeter the fruit, the less it must be served with sweeteners. For acidic fruits, such as raspberries or rhubarb, you can use a little honey or agave syrup.
- The water content plays a role for the length of the drying time. The higher the water content is, the longer the fruit puree has to dry. But you can also add banana or nutmeg to the fruit mass to make it a bit thicker.
Recipe for mango fruit leather
Preparation:
- Preheat the oven to 80 ° C and preheat the baking tray with baking paper. Peel 2 – 3 mangoes and cut them into cubes.
2. Mix the mangoes finely in the food processor or blender.
3. Put the fruit puree on the baking paper with a thickness of approx. 0.5 to 1 cm. Bake in the oven for 3-4 hours.
4. Use a finger to test whether the surface of the puree is dry. If it feels sticky, continue to dry it in the oven for 30-60 minutes and check consistency every half hour.
5. Cut the finished fruit leather into strips, roll out and store in an airtight container.
The fruit leather will be fresh for several weeks, even months.
